Ingredients:
1/2 Cup Tomatoes (chopped fine)
1/4 Cup Onions (chopped fine)
1/4 Cup Green Pepper (chopped fine)
1/2 Cup Chicken (chopped fine)
2 Cups Shredded Colby or Cheddar Cheese (8 ounces)
1/4 Cup Salsa
3 Tb Butter or Margarine
12 Flour Tortillas (6 inch)Preheat large skillet (300 degrees
or Med High). Mix all ingredients except tortillas and butter.
Butter one side of each tortilla. Place 6 tortillas buttered side
down on skillet. Put 1/2 cup of cheese mixture on each tortilla.
Place another tortilla on top of each with buttered side facing
up. Cook on both sides until tortilla is lightly brown and cheese
is melted. Cool slightly and cut into wedges.
Try Other Ingredients: chopped fresh cilantro or parsley, hot
chili peppers, spinach, mushrooms. |
