Pecan Pie

This is a great recipe I picked up at our family reunion.
It is so good and good for you too!

Serving Size : 6

Ingredients:
3 Eggs, beaten
1/2 Cup Lt. Brown Sugar
1 Cup Lt. Karo Syrup (I use 1/4 cup)
1 teaspoon Vanilla
1 Cup Pecans (I use 1-1/2 to 2 cups)
1/2 Stick Butter, Melted
Mix Eggs, Sugar, Karo Syrup and Vanilla and pour into shell.
Add Pecans. Pour Butter over top. Bake 10 min at 450 degrees and 30 min at 350 degrees on bottom rack. Check browning 1/2 way through. Cover with Foil before serving.
Note: I just tried this recipe with the pies cover in foil for the whole cooking time. The crust came out perfect this way. Don’t be afraid to reduce or increase the Karo Syrup. The original recipe called for 1 Cup of Karo Syrup but we think too sweet so I reduced it to 1/2 Cup. It’s still plenty sweet enough with 1/2.
