Tasty Tuesday’s Recipe from the Heart

Spinach Pie

I combined my favorite parts of several recipes to come up with this delicious pie.  You can substitute mushrooms for some of the spinach for a different flavor.

Ingredients:
Pillsbury pastry shell
3 c. fresh spinach (packed into measuring cup)
3/4 c. onion, chopped
2 tablespoons butter
1-1/2 c. shredded cheddar
4 eggs, beaten
1/2 c. milk
3 tablespoons flour
1/2 teaspoon baking powder
salt and pepper to taste
1 tomato, thinly sliced
Bake shell at 350 degrees for 8 minutes.  Remove from oven.  Place spinach in a covered pan with 2 tablespoons of water, cook on medium high for about 3 minutes and set aside (watch carefully).  Sauté onions in butter.  In a medium mixing bowl, combine beaten eggs, milk, flour, baking powder and pepper.  Stir in cheese, spinach and onions.  Pour entire mixture into pastry shell.  Lay tomato slices on top of pie.  Cover with foil and bake at 350 degrees for 1 hour or until knife comes out clean in center.
