Sweet Potato Soufflé

Makes an excellent dish for Thanksgiving
or served with grilled chicken & green beans.

Soufflé Ingredients:
4 Cups Sweet Potato – Cooked, Peeled and Mashed
1/2 c. Brown Sugar
3 eggs
1 stick butter, melted
1/4 tsp. nutmeg
1/2 tsp. cinnamon
Topping Ingredients:
1/2 Stick butter – melted
1 C. chopped Pecans
1 C. crushed corn flakes

To Make Soufflé: Combine all soufflé ingredients. Beat well. Pour into baking dish and bake 45 minutes at 350 degrees. Add topping last 15 minutes of baking time.

To Make Topping: Melt butter, then add nuts and corn flakes. Spread over top of soufflé for last 15 minutes of baking.
